Food Recipes: Meatballs à la Joy

Ingredients

  • 1 lb. ground beef
  • 1 egg, beaten
  • 2 tsp. oregano
  • 1 1/2 tsp. thyme
  • 1 tsp. basil
  • 6 or more cloves garlic, mashed
  • 1/2 cup flour
  • 2 tbsp. extra-virgin olive oil
  • 1/2 onion

Sauce:

  • 2 medium to large tomatoes, blended
  • 1/4 cup cilantro
  • raw apple cider vinegar
  • honey (I use raw)
  • chili powder
  • salt (I use real sea salt)

Directions

Mix together first group of ingredients and form into balls. Heat oil in pan and when it is hot, add meatballs. Brown both sides. In another pan, heat tomato sauce and add cilantro. Add vinegar, honey, chili powder, and salt to taste, making a kind of sweet and sour sauce. If you want a thicker sauce, you can add some arrowroot (1-2 tbsp) to the tomato sauce before it is heated. When the sauce is heated, add to meatballs. Simmer 5-10 minutes together.
