Food Recipes: Eggplant à la Joy

Ingredients
- 1/2 green pepper
- 1/2 onion
- 5-6 cloves of garlic, mashed
- 1 ripe tomato, chopped
- 1 medium eggplant
- 1/4 chopped cilantro
- 1 tbsp. oregano
- salt (I use real sea salt)
- apple cider vinegar
- extra-virgin olive oil
Directions
Sauté onions and peppers in oil. After a couple minutes, add mashed garlic and tomatoes. Sauté just until tender. Set aside. Meanwhile, boil eggplant with cilantro and oregano in water until cooked – possibly 10 minutes. In another dry pan, toast almonds until lightly browned and add to onions and peppers. When eggplant is done, strain, and add to vegetable mixture. Flavor to taste with salt and vinegar.
