Food Recipes: Lemon-Blueberry Muffins

Ingredients

  • 1 1/2 cups raw milk
  • 1 cup extra virgin coconut oil
  • 1 cup raw honey
  • 2 eggs
  • 20 drops lemon essential oil
  • 2 teaspoons vanilla
  • 1 1/2 cups freshly ground wheat flour
  • 1 1/2 cups freshly ground spelt flour
  • 1 cup freshly ground oat flour
  • 2 tablespoons baking powder
  • 2 teaspoons salt
  • 1 1/2 - 2 cups fresh or frozen blueberries

Directions

In a medium-sized bowl, whisk milk, oil, honey, eggs, vanilla and essential oil. Then, add flours, baking powder, and salt, and mix just until blended. Gently fold in blueberries. Place paper liners in two 12-cup muffin pans and divide batter evenly. Bake at 375 degrees for about 20 minutes.
