Food Recipes: Apple Muffins

Ingredients

  • 1 1/2 cups raw milk
  • 1 cup raw butter or extra virgin coconut oil, melted
  • 1 cup raw honey
  • 2 eggs
  • 20 drops lemon essential oil
  • 1 1/2 teaspoons vanilla
  • 1 cup wheat flour
  • 1 cup spelt flour
  • 2 cups oat flour
  • 2 tablespoons baking powder
  • 1 1/2 teaspoons salt
  • 1 teaspoon cinnamon
  • 1/2 cup walnuts or pecans
  • 1 1/2 cups grated apple (with peel)

Directions

In a medium-sized bowl, whisk together milk, butter, honey, eggs and essential oil. Stir in flours, baking powder, salt and cinnamon just until blended. Then, fold in nuts and apple. Place paper liners in two 12-cup muffin pans. Divide batter evenly in pans, then bake at 375 degrees for about 20 minutes.
