Food Recipes: Light Oatmeal Muffins

This recipe is in the cookbook "From the Kitchen of Two Sisters," by
Danielle and Lindsay Voeller.
Ingredients
- 2 cups oats
- 2 cups raw milk
- 2 eggs
- 2/3 cup raw honey
- 2/3 cup raw butter, melted
- 1 cup wheat flour
- 1 cup spelt flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
Directions
In a bowl, whisk together oats, milk, eggs and honey. Then, stir in flour, baking powder and baking soda just until combined. Divide mixture into two 12-cup muffin pans lined with paper muffin cups. Bake at 400 degrees for about 20 minutes.
