Food Recipes: Lemon-Maple Zucchini Bread

Ingredients
- 1 1/2 cups grated zucchini
- 1 1/2 cups whole wheat or spelt flour
- 1 cup oat flour
- 1 cup pure maple syrup or honey
- 1/2 cup melted butter or oil
- 1 tsp. vanilla extract
- 20-30 drops of lemon essential oil
- 3 eggs
- 1 Tbsp. baking powder
- 1/2 tsp. real sea salt
- 1/2-1 cup chopped walnuts or pecans
Directions
Preheat oven to 350F. Grease a 9"×5" loaf pan and set aside. Beat the eggs with a mixer for 2 minutes. Gradually add maple syrup or honey, oil, vanilla, and lemon essential oil. Stir in zucchini. Combine the dry ingredients in a large bowl. Make a well in the center and stir in the zucchini mixture. Blend just until smooth, then pour into greased pan. Bake for 50-60 minutes, until tester comes out clean. Cool in pan for 5-10 minutes, then remove and cool completely on wire rack.
