Food Recipes: Coconut Brown Rice

This is brown rice like no other. It never fails, whenever we serve it to guests, they want to know the recipe. Though it's just a side dish, it usually vanishes like a dessert.

Ingredients

  • 1 3/4 cups brown rice
  • 1/4 cup barley (hulled)
  • Add water accordingly (I use a rice cooker, but stove top requires much more water)
  • 1 Tbsp. extra virgin olive oil
  • 1/2 tsp. salt (real)
  • 1/2 cup coconut oil

Directions

Cook according to directions of rice maker or the stove top. When the rice is finished cooking, add coconut oil, mix thoroughly, and serve. Delicious!
