Food Recipes: Home-made Pizza

Ingredients

Dough:

  • 2 cups wheat berries
  • 2 cups spelt berries (if you don't have a wheat grinder, you'll need 5 1/4 - 5 1/2 cups of flour)
  • 1/4 cup honey
  • 1/4 cup olive oil
  • 2 cups warm water (heated to approx. 125 degrees)
  • 1 tbsp. yeast
  • 1/2 tbsp. salt (heaping)

Sauce:

  • 4 ripe tomatoes
  • 2 tbsp. arrowroot
  • 2 tsp. each oregano and thyme
  • 1 tsp. basil
  • 5 garlic cloves
  • 1 tbsp. chili powder
  • 1/4 tsp. cayenne powder
  • 1 tbsp. apple cider vinegar
  • 1 tbsp. honey
  • 1-2 tsp. salt

Toppings:

  • 3 cups grated cheese
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1 lb beef sausage
  • 1 lb ground venison (your choice of beef)

Directions

Dough: In a bowl, combine honey, oil, water, and yeast. Mix well. Grind wheat and spelt berries and add 3 cups of flour and the salt to the oil/honey mixture. Mix well. Continue adding flour and mixing it in until the dough is not gooey and then knead for 10 minutes adding more flour as needed so it's not too sticky. Make sure to knead on a low speed if you're using an electric mixer such as a Bosch or Kitchen Aid. When finished kneading, leave dough in bowl while preparing the toppings for the pizza.

Sauce: Blend tomatoes, arrowroot, and garlic in blender until smooth (mixture should be about 4 cups). Pour in saucepan and set to medium heat. Stir until it thickens. Then, add the rest of the sauce ingredients, adjusting to taste.

Toppings: Brown sausage and venison (your choice of beef) together in a cast iron skillet. Drain and set aside.

Grease two large pans or cookie sheets (mine are 12 1/2" by 21"). Knead dough a couple of times and divide into two. Spread dough in pans until even. Divide sauce between the two pans and spread evenly. On top of sauce, put on a little sprinkle of cheese and evenly distribute meat, onions, and green peppers. Sprinkle on the rest of the cheese. Cook at 350 degrees for 20 minutes.

This makes a LOT for our small family, but you can freeze it. It tastes great heated up another day when you don't want to cook.

Note: The dough is just regular bread dough so if you're not making 2 big pans of pizza like I did, just use the dough you need for the size pan(s) you have and you can make some bread with the rest.
