Food Recipes: Chicken and Broccoli Alfredo

Ingredients

  • 2 lbs. boneless chicken
  • 8 Tbsp. butter
  • 4 cloves garlic, minced
  • 1 Tbsp. Italian Seasoning
  • Broccoli for steaming
  • 2 Tbsp. flour
  • 1 1/3 cup cream
  • 1 cup parmesan cheese
  • dash salt
  • egg noodles

Directions

1. Cut broccoli into florets, and steam until crisp tender.
2. Bring a pot of boiling water to boil. Add egg noodles and cook to al dente; drain.
3. In a large skillet over medium heat, combine chicken, 4 Tbsp. butter, garlic and Italian seasoning. Cook until chicken is no longer pink.
4. Melt the rest of the butter in small saucepan. Add flour and mix well. Add cream, mix well. Bring to gentle boil for 1 minute, remove from heat and add Parmesan cheese. If Alfredo sauce is too thick, add a tablespoon or two of more cream.
5. Layer noodles, chicken and broccoli and top with Alfredo sauce. You could also mix it all together in a large pot and serve that way.
Serves 4.

I'm trying to cook from scratch and not serve or eat anything processed. I made this dish tonight and it was great. I didn't have any egg noodles and used some Trader Joe's Lemon Pepper Pappardelle Pasta that I had instead and it worked very well.

My family and my son's friends all enjoyed it very much. Thanks so much for sharing!

When I make this, I make the sauce and then dump the cooked chicken and steamed broccoli right in and mix it all up. I also use high-fiber pasta. It's easy to pile pasta on the plate and top with the sauce/chicken/broccoli mixture.
