Food Recipes: Blueberry Waffles

Ingredients

  • 3 eggs
  • 2 1/2 cups milk (I use buttermilk)
  • 1/3 cup coconut oil (heat enough to melt before adding)
  • 3-4 cups oat flour (blend oats in blender)
  • 3 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup blueberries (fresh or frozen)

Toping:

  • 3 cups blueberries, frozen or fresh
  • 1/3 cup honey (I use raw)
  • 2 tbsp. arrowroot
  • 1 1/2 tbsp. lemon juice

Directions

Whisk eggs for one minute. Add remaining ingredients except blueberries and mix thoroughly. Fold in blueberries and cook waffles in preheated waffle maker.

Note: The original recipe I modified this from used 1 1/2 cups of blueberries, but I found they always made the waffles stick on my iron and that was a mess. So, I use the blueberry sauce for the top and that makes them delicious!

Toping:

Put all ingredients in medium saucepan, and heat while stirring constantly until thickened. You can also add some sliced banana at the end if you like. Serve warm for waffles.
