Food Recipes: Pineapple Salsa

Ingredients
- 1 cup finely chopped fresh pineapple
- 2 tbsp. finely minced red onion or scallion
- 1 tbsp. chopped fresh cilantro or mint
- 1 serrano pepper, seeded and finely minced
- Optional - juice of 1 small lime (about 1 tbsp)
- 1 tbsp. pure maple syrup
Directions
Combine all ingredients in a medium sized bowl. Refrigerate covered for at least 1 hour or up to 2 days.
This makes a great topping for grilled fish, chicken or pork. I used it for salmon and my husband loved it.
