Food Recipes: Pineapple Salsa

Ingredients

  • 1 cup finely chopped fresh pineapple
  • 2 tbsp. finely minced red onion or scallion
  • 1 tbsp. chopped fresh cilantro or mint
  • 1 serrano pepper, seeded and finely minced
  • Optional - juice of 1 small lime (about 1 tbsp)
  • 1 tbsp. pure maple syrup

Directions

Combine all ingredients in a medium sized bowl. Refrigerate covered for at least 1 hour or up to 2 days.

This makes a great topping for grilled fish, chicken or pork. I used it for salmon and my husband loved it.
