Food Recipes: Oven Apple Pancakes

This recipe originated from The Maple Syrup Cookbook by Ken Haedrich, pg. 27.
Ingredients
- 2 firm cooking apples, cored and sliced
- 2 tbsp. maple syrup or honey
- 1 tbsp. lemon juice
- 4 tbsp. butter (home-made)
- 3 eggs
- 1/2 cup milk (I use raw milk)
- 1/2 cup flour (I use oat flour)
- 1/2 tsp. cinnamon powder
- 1/4 tsp. salt
- Maple syrup or honey for drizzling on top
Directions
Preheat oven to 425 F. Toss the apples with the maple syrup (or honey) and lemon juice, and set aside. Melt the butter in a medium sized cast-iron skillet and remove from heat.
Beat eggs and milk in a bowl with 1 tbsp. of the melted butter. Add dry ingredients and whisk until smooth (I do this all in my blender - using 1/2 cup whole oats for the 1/2 flour. Blending it makes it the consistency it needs to be)
Return the skillet to the heat and saute apples in the remaining butter over high heat. After a few minutes (usually 5), before the apples get too mushy, spread the apples evenly in the pan and slowly pour on the batter. Bake for 15-18 minutes, until puffy and lightly browned.
Serve hot or warm directly from the pan, drizzled with maple syrup or honey (we normally use diluted honey).
