Food Recipes: Cuban Beef Stew

Ingredients
- 2 tbsp. olive oil, extra virgin
- 1 onion, chopped
- 4 cloves garlic, minced (I put a lot more than this in)
- 1 red or green bell pepper, chopped
- 1 1/2 lbs. sirloin tips, cubed
- 2 bay leaves
- 1 tsp. ground cumin
- 2 tsp. dried oregano
- 1/2 cup dry or cooking sherry
- 2 cups of blended ripe tomatoes
- 2 tbsp. apple cider vinegar
- 1/4 cup raisins
- 4 potatoes, chopped
- 3 carrots, chopped
- Salt to taste
Directions
In a large saute pan, heat oil over medium heat. Cook onion and garlic in oil, stirring frequently, until transparent. Stir in cubed meat, and cook until browned. Stir in pepper, bay leaf, cumin, and oregano; cook for 2-3 minutes.
Stir in rest of the ingredients except potatoes, carrots and salt. Pour in enough water to just cover meat. Bring to a boil, reduce heat to low, and cover. Simmer until fork tender (about 1 1/2 hours). Add more water if the stew becomes too thick.
Stir in potatoes and carrots. Season with salt to taste. Cook covered, until veggies are almost tender. Uncover, cook until done (about another 1/2 hour).
The original recipe is from allrecipes.com, but I modified it quite a bit. We love it!
