Instead of being chemically processed, our non-caffeinated blend is decaffeinated using the unique hot water process which consists of soaking the freshly picked beans to extract the caffeine whereupon they are then re-dried and freshly roasted.

Cane Creek Coffee is a mild yet full bodied High Grown (HG) coffee grown in the mountains of Western Honduras (Fair Trade and naturally grown). High Grown coffee is clearly superior to its counterparts. Just as the finest wines need time to age, a coffee bean requires a long, slow growing season in which to develop the deep and alluring nuance of flavor. Many small coffee farms are overtaken by large agribusiness to grow coffee at lower, warmer altitudes so as to force the bean to mature faster and maximize yield at the expense of flavor. Cane Creek Coffee is 100% High Grown, using beans exclusively raised the agrarian way at an altitude of at least 3,500 feet. At such an elevation, the air is cooler and provides a slow maturation that gives our coffee an excellent flavor that mass produced coffee cannot match.
Our growing processes are not the only thing of which we can boast. The coffee picker at harvest time plays a role worth mentioning as well. Like most plants, coffee cherries do not all mature at the same time. A typical plant will have both red (ripe) and green (unripe) cherries on the same branch at harvest time. Thus, it is necessary for the picker to be selectively tedious in what he harvests; they often return time and time again to the same plant to see if the last week's unripe berries are ready to be picked. A wise coffee farmer will pay for at least three separate harvests of his crop in this way. It takes longer and is more expensive to use these methods but the results justify the expense.
